metheny//nutty debut

after i listened a bit to Letter from Home by the Pat Metheny Group, though, i now find myself recommending it.

the band's great to listen to WHILE YOU MAKE VEGAN SWEET POTATO CARROT PANCAKES WITH NUT BUTTER.

i harbor a vague yearning for vegan cooking, likely due to the influence of a close friend. her parents have maintained a vegan household for ten or fifteen years. when i visited the house for high school sleepovers, i was routinely astounded by how SOUL-fulfilling vegan food could feel. note//not only does my friend's parents' food taste beautifully, but it just digests more efficiently. it FEELS good.

("vegan" does not automatically denote healthfulness, in the same way that "going on a diet" does not promise rapid weight loss. it's not what you do, it's how you do it.

but this gal's parents prioritize, i gotta say it, INGREDIENTS OF THE EARTH, not vegetarian dairy-free escapes. 
saltines and dots are vegan, sure, meaning they contain no animal products. still, veganism and truly NOURISHING the body are not tied to each other.

but they can be.)

to extend her brooklyn brownstone family diet, my friend and i usually scour the city for vegan restaurants.

but recently, i've tried to remind myself that home cookin' is really something i should capitalize on more.

i say i love cooking&baking. so now i practice while taking my wallet off Jenny Craig.

here is my "nutty debut": SWEET POTATO CARROT PANCAKES WITH NUT BUTTER.

the pancakes themselves are vegan, refined-sugar free, and HELLA good. but nut butter and i are like <3333333333

(i told myself im being vegan today, just for excitement. yup, folks, this stuff is exciting to me. but again, VEGAN DOES NOT MEAN HEALTHY. at the same time, it is important to not be overly conscious of the food you eat. moderation is key, baby (Aristotle<33333))

here is the title again: SWEET POTATO CARROT PANCAKES WITH NUT BUTTER

MAKES THREE MEDIUM PANCAKES

1 small sweet potato, cooked (use however much of the sweet potato you want; i used half)
1/2 cup ANY FLOUR YOU WANT (i used oat flour by makin old-fashioned oats into finely-ground particles with the help of my blender friend)
1/4 tsp. baking powder
1 large carrot (put in however many shavings you want i dont care i wont count them wutevr)
1 truvia packet (switch out for brown sugar, honey, or maple syrup if you want~~this is the first time i tried truvia in a recipe~~im usually not a fan of fake sugar but the "true" sound of the brand really worked on me~~thanks advertising hehehe wut do u do in your boardrooms~~plus it's supposed to be less harmful than other fake sweetners rite?)
SO MUCH GROUND CINNAMON AND NUTMEG AND CLOVES (to taste)
1 tsp vanilla (always put extra)
1/2 cup water

INSTRUCTIONS

mix all the stuff together at your own discretion. this is vegan ladies and gentlemen, you don't have to worry too much about separating the wet ingredients from the dry ones lol wutever gluten

MIX IT

spray a skillet with no-stick spray

COOK IT

EAT IT or top with WHATEVER U WANT (i recommend cashew butter yum)

I love this recipe; it refreshes usual vegan pancake recipes by switching out banana or applesauce for sweet potatoes and carrots. PLUS IT'S VITAMIN A PACKED and kind of a recipe for latkes instead of a recipe for pancakes.
